ANTS CLIMBING TREES

A very easy, inexpensive, and extremely yummy wok dish with a fantastic name. The first time I ate it was in a cosy restaurant the night my future husband proposed, so it's very special for me. My own personal touches include my homemade chicken stock, coriander from the garden, and home-grown chillies.

Ingredients
  • 300g lean pork mince

  • 4 tablespoons Trident Honey, Soy & Garlic Marinade

  • 1 tablespoon Chinese rice wine

  • 1 teaspoon cornflour

  • 2 teaspoons Trident Sweet Chilli Hot Sauce

  • 150-200g Trident Rice Vermicelli

  • 1½ tablespoons peanut oil

  • 1-2 fresh red chillies, chopped

  • 3 spring onions, sliced

  • 1 tablespoon grated ginger

  • 1 clove garlic, crushed

  • 125ml chicken stock

  • 1 teaspoon sesame oil, to serve

  • Extra chopped chilli, for garnish

  • Coriander sprigs, for garnish

Instructions:
  • Mix minced pork with 2 tablespoons of the Trident Honey, Soy & Garlic Marinade, Chinese rice wine, cornflour and Trident Sweet Chilli Hot Sauce and leave for 30 minutes.

  • Cover the Trident Rice Vermicelli with boiling water for about 7 minutes or until soft, then drain and cut into shorter lengths with scissors.

  • Heat the wok and add the peanut oil. When hot, add the chilli, two spring onions, ginger, garlic and toss well. Then add the pork and its marinade, stirring well. When the meat has browned, add the noodles and toss well over medium heat. Add the remaining Trident Honey, Soy & Garlic Marinade and chicken stock and simmer until the liquid has been absorbed.

  • Turn out onto a warm serving platter, drizzle with sesame oil and scatter with remaining chopped spring onions, chillies and coriander.
