Crispy Battered Fish with SCS

- Tridents Sweet Chilli Sauce
- 300g basa fish fillet
- 1 cup Self Raising Flour
- 1 cup soda water
- 60g Rocket
- 1 Green onion sliced (Shallot)
- Sesame Seeds to garnish
- Vegetable oil for frying
Step 1 - Add flour to a large bowl and slowly pour soda water in mixing with a whisk to form batter.
Step 2 -Heat oil in a heavy base saucepan. Dip the basa fillets into the batter to coat, When the oil is at approx 180 degrees or bubbling start to add the fish. When batter is golden remove from oil and drain on kitchen paper towel.
Step 3 - On a bed of rocket drizzle Tridents sweet chilli sauce, serve fish top with green onion and sesame seeds. Use Trident sweet chilli sauce as additional dipping!
