Sweet Chilli and Ginger Chicken Noodle Parcels

- 440g packet Wokka Golden Hokkein Noodles
- 1 bunch broccolini, trimmed
- 4 shiitake mushrooms, whole or thinly sliced
- 500g chicken tenderloins or strips
- ⅔ cup sweet chilli sauce
- 1 tablespoon minced ginger
- 1 tablespoon soy sauce
- 1/3 cup lime juice
- 1/3 cup chopped coriander leaves
- 2 spring onions, sliced
Step 1 - Preheat oven to 200°C (180°C fan forced). Tear four sheets of baking paper approx 30 cm long. Open the two sachets of noodles and divide equally into the centre of each paper. Top evenly with broccolini, mushrooms and chicken.
Step 2 - Combine sweet chilli sauce, ginger, soy sauce and lime juice in a small bowl and pour evenly over each parcels.
Step 3 - Fold up the long sides of each parcel and tuck in the ends to form a parcel. Place on a baking tray and bake for 10-15 minutes or until chicken is cooked through. Open parcels and top with coriander and spring onions. Serve.
